Healthy Avocado Egg Breakfast Sandwich

This list has plenty of lunch and dinner options. But I wanted to start with a breakfast alternative to avocado toast.

After all, breakfast is the most important meal of the day!

This sandwich piles a fried egg, spinach, tomatoes, and avocado on whole-grain bread.

Add some mozzarella, garlic, and pickles (if you like), and you’re all set.

It’s a filling, flavorful vegetarian sandwich that’ll start your day off right.


  • ½ avocado
  • 1 garlic clove, minced
  • 1 tbsp chopped pickles
  • 1 fried egg
  • 2 slices of bread of choice
  • 1 cherry tomato, sliced
  • 1-2 Tbsp mozzarella
  • Handful of spinach


Fry an egg on both sides or prepare as you prefer!

Top one slice of the bread with the avocado and minced garlic. Mash the avocado, spreading it all over the bread.

Put the fried egg on top. Then add the pickles, tomato slices, spinach, and mozzarella. Finally, top it with the other slice of bread.

Add a little bit of olive oil to a nonstick pan and toast the bread on both sides for 2-3 minutes or until golden brown.

The avocado club features two types of cheese, a juicy tomato, and crisp lettuce.

Then, there’s the avocado and bacon. You can’t very well have an avocado club sandwich without those.

If you want to keep the sandwich vegetarian-friendly, use coconut bacon. (Or any fake bacon you prefer.)

If not, fry you up some greasy, salty, delicious bacon and slap it on the sandwich.

Either way, you’ll have a hearty, tasty lunch option full of crunch and flavor.


  • 1 handful of coconut bacon (or cooked bacon)
  • 4 slices bread
  • 1 avocado
  • 1 large ripe tomato
  • Mayonnaise
  • 4 large leaves of romaine lettuce
  • 1 slice of cheddar cheese
  • 1 slice provolone cheese


Make the coconut bacon in advance and store it in the freezer until ready to serve (no need to defrost). Alternatively, cook the bacon. 

Toast the bread (optional but recommended).

Slice the avocado and slice the tomatoes. Sprinkle the tomato slices with a pinch of salt. 

Slather both sides of the bread with mayonnaise. Layer the bottom bread slice with cheddar and provolone cheese, then tomato slices and avocado slices. Top with a sprinkle of coconut bacon and romaine lettuce. Add the other slice of bread and serve. 

Tuna Avocado Sandwich Recipes

Want to try something new in your tuna salad? Add avocado into the mix! It makes it thicker, chunkier, and much creamier. 

As far as taste is concerned, it doesn’t alter it very much.

It’s still the umami-packed, slightly zesty tuna salad you know and loves.

  • 1 5-ounce can of tuna, preferably packed in olive oil, drained
  • 1/2 ripe avocado, roughly chopped
  • 1/2 cup minced celery
  • 1/4 cup minced red onion
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper


Place all of the ingredients in a medium bowl. Mix with a fork, mashing the avocado and breaking up the chunks of tuna as you go, until the ingredients are well combined.

Add more oil or salt and pepper if necessary, and serve on your favorite sandwich bread or toast.

Simple Greek Avocado Sandwich Recipes

This sandwich may be simple to make, but its taste is anything but ‘simple.’ 

It has a robust, zesty flavor featuring briny olives, earthy peppers, and bold basil pesto.

The bright zing of balsamic vinegar and the fresh veggies add additional depth.

It’s a colorful, flavorful sandwich that’s a little messy to eat.

Still, after the first bite, you won’t mind the mess. You’ll find it far too yummy to care. 

FixingsAvocado Sandwich Recipes

  • 2 slices soft whole wheat bread
  • ½ avocado
  • 1 tablespoon basil pesto
  • Roasted red bell pepper (jarred is fine)
  • Cucumber, sliced into thin rounds
  • Thinly sliced red onion
  • 6 pitted kalamata olives, thinly sliced
  • Handful spring mix
  • Balsamic reduction or regular balsamic vinegar


Pit and peel the avocado half and mash it with a fork. Use a butter knife to spread avocado on one slice of bread. Spread a layer of pesto on the other slice of bread.

Top the avocado bread with a single layer of roasted red bell pepper. Then add a layer of cucumber slices, red onion, olives, and spring mix. Use a spoon to sprinkle some balsamic reduction over the lettuce. Place the pesto slice on top, pesto side down.
