This sandwich piles a fried egg, spinach, tomatoes, and avocado on whole-grain bread.

Add some mozzarella, garlic, and pickles (if you like), and you’re all set.

It’s a filling, flavorful vegetarian sandwich that’ll start your day off right.

Fixings

  • ½ avocado
  • 1 garlic clove, minced
  • 1 tbsp chopped pickles
  • 1 fried egg
  • 2 slices of bread of choice
  • 1 cherry tomato, sliced
  • 1-2 Tbsp mozzarella
  • Handful of spinach

Method

Fry an egg on both sides or prepare as you prefer!

Top one slice of the bread with the avocado and minced garlic. Mash the avocado, spreading it all over the bread.

Put the fried egg on top. Then add the pickles, tomato slices, spinach, and mozzarella. Finally, top it with the other slice of bread.

Add a little bit of olive oil to a nonstick pan and toast the bread on both sides for 2-3 minutes or until golden brown.

If you want to keep the sandwich vegetarian-friendly, use coconut bacon. (Or any fake bacon you prefer.)

If not, fry you up some greasy, salty, delicious bacon and slap it on the sandwich.

  • 1 handful of coconut bacon (or cooked bacon)
  • 4 slices bread
  • 1 avocado
  • 1 large ripe tomato
  • Mayonnaise
  • 4 large leaves of romaine lettuce
  • 1 slice of cheddar cheese
  • 1 slice provolone cheese

Method

Make the coconut bacon in advance and store it in the freezer until ready to serve (no need to defrost). Alternatively, cook the bacon. 

Toast the bread (optional but recommended).

Slice the avocado and slice the tomatoes. Sprinkle the tomato slices with a pinch of salt. 

Slather both sides of the bread with mayonnaise. Layer the bottom bread slice with cheddar and provolone cheese, then tomato slices and avocado slices. Top with a sprinkle of coconut bacon and romaine lettuce. Add the other slice of bread and serve. 

Tuna Avocado Sandwich Recipes

Method
