6 Mission Almond Flour Tortillas
2 tsp vegetable oil
8 oz gluten-free chicken breakfast sausages, casing removed
½ tsp salt
¼ tsp pepper
1 cup shredded Monterey Jack cheese (about 4 oz)
6 tbsp prepared salsa or pico de gallo sauce
¼ cup chopped pickled jalapeño pepper
¼ cup chopped cilantro
Step 1: Cook the Sausage.
Heat the oil in a nonstick skillet over medium-high heat. Mincemeat and cook sausages for 6 to 8 minutes or until browned and fully cooked.

4 Mission Almond Flour Tortillas
2 tbsp. grainy sugar
½ tsp. ground cinnamon
¼ cup almond butter
2 large bananas, halved crosswise
2 tbsp. butter, melted
Preheat oven to 400 degrees Fahrenheit. Mix sugar and cinnamon in a shallow bowl. set aside.
Spread 1 tbsp. Brush each tortilla with almond butter, leaving a 1-inch rim around the edge. Place half a banana in the center of each tortilla. Fold the bottom and sides of the tortilla and roll it up like a burrito. Brush with melted butter and sprinkle with cinnamon sugar. Place seam side down on a parchment-lined baking sheet.
Bake for 8-12 minutes or until golden brown and the filling is warm.

1 tsp. paprika
¾ tsp. salt, divided
¾ tsp. pepper, divided

1 lb. chicken tenders
¾ cup sour cream
⅓ cup cilantro, finely chopped
2 tbsp. lime juice
1 tsp. lime zest
2 cups shredded lettuce
1 avocado, halved, pitted, peeled, and sliced
Preheat oven to 425˚F. In a shallow bowl, stir together almond flour, coconut, paprika, and 1/2 tsp. each salt and pepper, garlic powder, and cayenne.
Place eggs in separate shallow dishes. One at a time, dip each chicken tender in eggs, then dredge in almond flour mixture until well coated. Arrange on parchment paper–lined baking sheet, about 2 inches apart.
Bake, turning halfway through, for 12 to 14 minutes or until golden brown and cooked through.
Meanwhile, stir together sour cream, cilantro, lime juice, lime zest, and remaining salt and pepper.
