- ½ cup light brown sugar, packed
- 1 (4-ounce) package of instant pistachio pudding powder mix
- 2Â eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 ½ cups coarsely chopped Oreo cookies
Instructions For Pistachio Oreos
Preheat oven to 350 degrees Fahrenheit. Arrange the baking sheets on the baking sheet. In a large bowl, with an electric hand mixer on high speed, beat the softened butter until creamy or until creamed, 1 minute.
Add granulated sugar, brown sugar, and pistachio pudding powder, and beat on high speed for another 30 seconds. Then add the eggs and vanilla extract and whisk again over high heat for an additional 1 minute or until fluffy and smooth.
Add flour and baking powder and mix on low speed until completely combined.
Gently mix in the finely chopped Oreo cookies, being careful not to crush them too much. Use 1.5 to 2 tablespoons of dough for each cookie and roll the dough into a ball.
