Most store-bought pistachio ice creams are lacking in flavor. The combination of toasted pistachios and almond extract make this ice cream stand out.

My pistachio almond ice cream is a summertime staple for me, and I hope it makes it to your home too.

Pistachio Almond Ice Cream Fixings

Pistachios- Make sure to buy shelled pistachios to save yourself some time. I suggest buying unseasoned, untoasted nuts and toasting them at home.

Almond Extract– Look for a pure almond extract for the best flavor.

Green food color– This is completely optional but will give you that classic green color.

How to Make Pistachio Almond Ice Cream?

Toast nuts: Preheat oven to 350F. Line a baking sheet with parchment or a silpat. Toast nuts for 8 minutes or until lightly golden and crisp. Cool to room temperature.

Prep bowl: Place a sieve over a large bowl and set aside.

Grind nuts: Finely grind the cooled pistachios using a food processor. Add sugar and continue to grind until very finely ground, about 1 minute.

Warm base: Combine the cream, milk, pistachios, and salt in a medium saucepan. Warm over medium heat until the mixture comes to a slight simmer.

Whisk eggs and sugar: While the cream mixture heats, whisk together the egg yolks and sugar in a bowl until pale, thick, and creamy, about 3-5 minutes.

Temper eggs: Ladle about ½ cup of the warm cream mixture to the bowl with the eggs and sugar while constantly whisking.

Cook base: Reduce the heat to medium-low. Slowly pour the egg mixture into the pan, while whisking constantly. Continue to whisk, making sure to scrape down the sides and bottom of the pan repeatedly. Cook for 3-5 minutes or until the custard is thick enough to coat the back of a spoon.

Strain & cool: Immediately strain the ice cream base through a sieve into the prepared bowl. Allow cooling in a bowl over a wire rack until room temperature. Stir in the almond extract and food coloring, as desired. Chill in the fridge for at least 4 hours or up to 24 hours.

Freeze & serve: Freeze using an ice cream machine according to the manufacturer’s instructions. Transfer to freezer to set up completely or enjoy some soft serve. Top with chopped pistachios, if desired.

Toast your nuts. For optimal flavor, toast your nuts first. I even toast them at home if I buy packaged pistachios that were already toasted.

Grind pistachios properly. I like to add sugar to the food processor along with the pistachios to create friction and help them grind very finely. Fewer pistachios will be wasted when you strain the ice cream base.

Variations. You can leave out the almond extract or put in as much as you prefer. Add a little at a time to avoid overdoing it.

Pistachio Almond Ice Cream Promotes Healthy Digestive System

Pistachios contain copper, manganese, vitamin B6, phosphorus, and thiamine. These minerals and nutrients help replenish the microbiota (microbial environment in gastrointestinal health).

The microbiota strengthens the gut, shapes the intestinal epithelium, and protects against pathogens. It also decreases inflammation in the intestine and promotes metabolism. In addition, the high fiber in the pistachio helps regulate digestion by adding bulk to the stool. Additionally, it aids in the improvement of bowel motions.

Pistachios promote healthy bacteria known as probiotics which have a super beneficial impact on gut health. Probiotics help increase the absorption of healthy nutrients like protein, vitamins, and minerals from the diet.

In addition, they help eliminate harmful bacteria from the intestinal tract. They also help lower the pH level in the colon, which allows the stool to pass through it smoothly. You can get more from this video.

Pistachio Almond Ice Cream Helpful For Women

Pistachios also help prevent and cure PCOS in women. That is because it reduces insulin levels in the body and balances hormones. As per studies, nuts containing PUFAs and MUFAs help balance insulin, androgen, and cholesterol levels.

Pistachios contain healthy nutrients such as potassium, calcium, folate, iron, and a good amount of protein and fiber essential for a baby’s healthy growth. But women should always need to consult their doctor before consuming anything during pregnancy.

Good For Diabetics

Pistachios are a low-glycemic food. They have a low carbohydrate content which releases less sugar in the blood when our body metabolizes carbohydrates in sugar. Therefore, they help lower blood sugar levels and have a low glycemic index value.

Low glycemic index foods are recommended for type 2 diabetes because they release low blood sugar and reduce blood sugar levels. However, a diabetic should eat only 1-2 servings of pistachios, not every day but every alternative day.

Therefore, 30gm of pistachios per day is enough for healthy consumption. I have also written an article on Smooth Almond Cream The Perfect Topping For Your Desserts.

Pistachio Almond Ice Cream Improves Sleep Quality

Pistachios are rich in melatonin, a hormone released in the body to make us sleep. Melatonin is a sleep hormone that regulates our sleep-wake cycle and quality of sleep.

Therefore, eating pistachios at night 2-3 hours before going to bed can improve sleep quality.

Pistachios For Weight Loss

Pistachios are high in fiber. Consuming fiber may help you lose weight because it keeps you fuller for longer and lowers your calorie consumption, both of which aid in weight reduction.

Pistachios also improve your metabolic rate, which helps you burn more calories. The fiber in pistachios also helps in easing digestion. Improved digestion results in a faster metabolic rate. Additionally, they are high in protein, which helps boost the body’s energy levels and metabolic rate.

They contain healthy fat such as polyunsaturated fats and monounsaturated fats. These fats are soluble and do not accumulate in the body to cause weight gain. As a result, pistachios help you lose weight.

Does pistachio ice cream have almonds?

Most commercially prepared pistachio ice cream is flavored with bitter almond paste or extract and doesn’t even contain pistachios! My homemade version combines the best of both worlds.

Why is pistachio ice cream green?

People add food coloring to give a visual cue as to what they are eating. The food coloring is completely optional and won’t affect the flavor.
