Except this, if you want a variety of muffins, you can try healthy banana muffins, low-carb English muffins, and blueberry muffins. These all are delicious; you will love them.

Ingredients

  • 2 cups of conventional (or traditional) oats
  • ½ cup applesauce
  • One-half cup of chopped strawberries
  • 1/4 of a cup of Greek yogurt
  • 1/4 a cup of honey
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • Two eggs
  • 1 tsp vanilla

Check that your baking soda and powder have not passed their expiration dates! While testing this recipe for the first time, I noticed that my baking powder had turned into a sort of cake, and I was down to the last bit. The muffins hardly expanded in volume at all.
