A muffin is one of my favorite foods or treats with breakfast. But let’s be honest: many of them aren’t all that healthy! This recipe is not only delicious but also healthy and quick! I’ve tested this recipe with plain applesauce, fresh strawberries, and Strawberry Chia Applesauce.

Both versions turned out delicious. Both of them came out wonderfully! When using the individual components, you will notice a few more “pieces” of strawberries, but the flavor will not be affected in any way. Except this, if you want a variety of muffins, you can try healthy banana muffins, low-carb English muffins, and blueberry muffins. These all are delicious; you will love them.


  • 2 cups of conventional (or traditional) oats
  • ½ cup applesauce
  • One-half cup of chopped strawberries
  • 1/4 of a cup of Greek yogurt
  • 1/4 a cup of honey
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • Two eggs
  • 1 tsp vanilla
  • 1/4 of a teaspoon of almond extract
  • ¼ cup almonds, sliced


  • Preheat oven to 400 degrees Fahrenheit. Prepare a muffin tin with non-stick cooking spray or line it with cupcake liners and divide the batter evenly among the cups (note: recommend spraying with cooking spray instead of liners
  • Put the oats in a blender and whirl them around for a few seconds or until the consistency of coarse meal is achieved (similar to cornmeal)
  • After adding the remaining ingredients, besides the sliced almonds, pulse the food processor several times until everything is incorporated
  • Place in a muffin tin and sprinkle with sliced almonds before baking. Wait between 14 and 16 minutes until a toothpick inserted into the muffin comes clean
  • After allowing the muffins to cool in the pan on the cooking rack for two minutes, remove them from the muffin tin and place them on the cooking rack. Come to room temperature


Check that your baking soda and powder have not passed their expiration dates! While testing this recipe for the first time, I noticed that my baking powder had turned into a sort of cake, and I was down to the last bit. The muffins hardly expanded in volume at all.

I have experience using applesauce in my smoothie, which gives me a refreshing vibe.

I first tried it out with my blueberry banana smoothie, and because it turned out to be such a delicious combination, I decided to give it another go with some lovely strawberries this time. Strawberry Applesauce Salad


  • 6 ounces of fresh strawberries Jell-O
  • 1 3/4 cups of water that is boiling
  • 1 1/4 cups applesauce
  • 10 ounces of strawberries from the freezer, only partially thawed
  • Optional: lettuce leaves, mayonnaise, and citrus zest for garnish

  • Bring the water to a rolling boil on the stovetop or microwave
  • The dry Jell-O powder should be placed in a large glass bowl, and then the boiling water should be carefully poured over the Jell-O. After you have stirred it until it has completely dissolved, let it stand for five minutes
