  • 3 tbsp oil any edible oil
  • ½ teaspoon mustard seeds
  • ½ teaspoon cumin seeds
  • 3 whole dried red chilies
  • 6 fresh curry leaves
  • 2 medium size onions, finely chopped
  • ¼ teaspoon ginger garlic paste
  • 2 tomatoes, finely chopped
  • Salt to taste
  • ½ teaspoon red chili powder
  • ¼ teaspoon turmeric powder
  • 1 cup coconut milk
  • 1 cup tamarind extracted pulp
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin powder
  • ¼ teaspoon black peppercorn powder
  • 4 curry leaves (to be added while boiling)
  • 1 tomato, cut into four halves (to be added while boiling)
  • 2 tablespoons fresh coriander leaves

Instruction

Washing And Marinating Fish:

  • Take fish pieces and wash them well with salt, turmeric, and lemon to get rid of the raw smell
  • Drain the fish pieces to remove excess water from the fish
  • Take the fish pieces into a bowl, add salt, red chili powder, turmeric powder, and also ginger garlic paste
  • Mix them well and marinate them for 15 to 20 minutes also

Making The Coconut Paste:

  • Take 4 tablespoons of fresh coconut pieces or desiccated coconut pieces and also make a thin paste or use coconut milk which is readily available in supermarkets

  • Take a wok, add oil, and heat it also
  • Add cumin seeds, and mustard seeds and allow them to splutter

  • Add the main spices such as coriander powder, cumin powder, and black pepper powder
  • Add some fresh curry leaves, check for salt, and if required
  • Let the curry boil for 5-10 minutes
  • Add the tomato which is cut into four halves into the curry for flavor
  • Add in the marinated fish pieces
  • Give a stir delicately
  • Add in some freshly chopped coriander leaves
  • Let the whole gravy cook for 10 to 12 minutes along with the fish
  • Switch off the flame
  • Serve hot with rice

Notes

  • Adding a cut tomato, in the end, is entirely optional
  • Instead of chopped onions and tomatoes, a paste of those ingredients too can be used
  • If required garam masala powder too can be added for flavor enhancement
  • Add the coconut milk or the thin coconut blended paste.
  • Let it cook for 5-10 minutes
  • Add about 1 cup of tamarind extracted pulp

  • 750 gms of fish/1 kg boneless fish pieces cut into medium size

  • Add salt, red chili powder, turmeric powder, and coriander powder and mix well also
  • Every fish piece should be mixed well with the masalas
  • Marinate the fish mixture by refrigerating it well for about 15-20 minutes so that the masala gets absorbed well into the fish
  • Add 2-3 tablespoons of oil in a pan and heat it, add 3-4 fish pieces and shallow fry each side for about 6-7 minutes on low flame until fish is fried well on both sides
  • Also, add some curry leaves and slit green chilies onto them while frying
  • Take fish pieces out from the pan and spread them on absorbent paper also
  • Continue frying the rest of the pieces in a similar manner

Notes

  1. In this recipe, I have shallow fried the fish pieces but the same fish pieces can also be deep fried
  2. Fry the fish pieces on low to medium flame whether they are deep-fried or shallow fried
  3. Fry for a longer time if it is shallow fried i.e for about 5-6 minutes on each side until both sides are cooked well and coated well with the masala
  4. Additional spices like garam masala powder too can be added while marinating the fish

Apollo Fish Fry Indian Fish Recipes

Apollo fish fry is a Hyderabadi special boneless fried fish that is stir-fried in curry leaves tempering after deep frying. It is often found in the menu list of most Hyderabadi restaurants and also is a highly ordered dish in restaurants of the Andhra and also Telangana regions.

  • ¼ teaspoon coriander powder
  • ¼ teaspoon garam masala powder
  • ¼ tsp black pepper corn powder
  • 2 tablespoons thick yogurt
  • a pinch of yellow food color mixed with 2 tablespoon water
  • 2 tablespoons freshly chopped coriander leaves

Instructions

Fish Marination:

  • Wash the boneless fish pieces well and strain them well to remove excess water
  • Take a mixing bowl, and add the boneless fish pieces also
  • Add salt as per taste, red chili powder, turmeric powder, black pepper powder, add ginger garlic paste also
  • Add corn flour and also all-purpose flour/ maida into it
  • Add beaten egg to the marination
  • Add lemon extract
  • Mix all the ingredients well with the fish pieces
  • Cover and marinate in the refrigerator for at least 30 minutes

Deep Frying:

  • Take a deep frying pan or a wok, add oil for deep frying, and heat it well also
  • Drop the marinated fish pieces carefully into the oil
  • Deep fry them for at least 10 minutes or until they are fried well and completely also
  • Take the fish pieces out and place them on absorbent paper
  • Tempering the fish pieces:
  • Take a saute pan, add oil, and heat it also
  • Add vertically slit green chilies, add finely chopped garlic also
  • Add fresh curry leaves and also saute for a few seconds
  • Add dry spices such as salt, red chili powder, cumin powder, coriander powder, garam masala powder, and black pepper powder
  • Add yogurt and give a good mix
  • Add yellow food color mixed with little water
  • Mix well
  • Add the fried fish pieces to it
  • Mix the fish pieces with the tempering
  • Saute until yogurt gets absorbed into the fish
  • Lastly, add some freshly chopped cilantro leaves
  • Mix well and turn off the heat
  • Garnish with lemon wedges and sliced onions also

Notes

  • Adding yogurt is not mandatory and can be skipped but in the Hyderabadi style of cooking usually, yogurt is added
  • Food color too can be added as an optional ingredient and also can be kept natural without giving color to it
  • If the sauce is preferred then add half a teaspoon of soy sauce to enhance the flavors.
  • In the tempering chopped cashews can be added and also stir-fried to get cashew flavor in the starter dish
