Ingredients – Plantiful Kiki Recipes

  • 1- 15oz can chickpeas
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract (you may add more if you wish)
  • 3 tbsp cocoa powder
  • 4-5 tbsp maple syrup
  • ½ cup dairy-free chocolate, melted
  • 1 peppermint candy cane crushed, optional

Procedure

1). Add all ingredients except chocolate chips to a small food processor. Blend until smooth and creamy.

2). Scoop the truffle mixture with a 1-tbsp measuring spoon and roll it into a ball. Place the balls in the bowl so that the balls do not touch each other. Then put it in the freezer for 2 hours.

  • 3 cups diced potato, peeled (if you use Yukon gold then you don’t have to peel them)
  • 1 ½ cups hot potato water
  • ½ cup raw cashews
  • 2 tsp lemon juice
  • 2 tsp garlic powder

  • 1-10oz box jumbo pasta shells (can use gluten-free, I like these ones )
  • 1-24 oz jar marinara sauce. (I like roasted garlic and try to find one that is low in fat or fat-free, I like this one )
  • Filling:
  • 2 cups riced cauliflower, cooked
  • 1 cup raw cashews, soaked
  • ½ tsp onion powder
  • 1 tsp garlic powder
  • 1 ½ tbsp lemon juice
  • 1 tsp salt (or to taste)
  • 1 tsp Italian seasoning
  • 1 cup fresh spinach, chopped

Procedure

1). Preheat oven to 375.

2). Cook mussels in boiling water according to package directions, then drain and set aside.

3). Add all filling ingredients except spinach to a medium food processor or high-speed blender. Process or puree until smooth and place in a medium bowl.

4). Stir in chopped spinach. Pour half the marinara into the bottom of a 9×13 baking dish and spread it around.

5). Take 1 cooked shell at a time and add 1 teaspoon (1 tablespoon) of filling to 9 x 13 shells.

6). Once all the clams are packed and placed in a casserole dish, pour the remaining marinara sauce over each clam. Then cover and bake for 25 minutes. This delicious stuffed mussel dish goes great with a Caesar salad and is perfect when you’re in company. Try topping it with my cashew parmesan cheese.

*To soak cashew nuts, soak them in cold water overnight or pour boiling water over them and let them soak for 2-4 hours until they are ready to use.

6). Once baked, remove from oven and let cool slightly.
