How to Make Almond Flour Tortillas
Combine almond flour, psyllium peel, baking powder, and salt in a medium mixing bowl and mix. Add olive oil and water and knead the dough. Knead The Dough
Scoop out dough and knead until smooth, springy, and supple. It’s gluten-free, so you don’t have to knead the dough for a long time. I also like to let the dough rest for 5-10 minutes so that the plantains can absorb all the water. The dough will be soft and elastic. If the dough is too wet, add ½/2.5 g of psyllium all at once. If too dry, add water, 1/5 mL teaspoon at a time.
Unfold The Dough
When you’re ready to cook the tortillas, divide the dough into quarters. Take a piece and shape it into a ball. Place the ball on top of the parchment paper, cover it with another parchment paper, and flatten it with the palm of your hand. Next, roll the half toward you. Turn the dough 180 degrees and repeat the process. If you’re making low-carb tortillas for the first time, it’s a good idea to roll the dough a little thicker and smaller, no more than 8 inches in diameter. Thicker and smaller tortillas are easier to handle. However, a well-textured tortilla is about 1⁄16 inch/1.6 mm thick.
