  • For these apple bran muffins put a muffin tin full of paper liners into the oven and preheat it to 350 degrees Fahrenheit. Combine a quarter of a cup’s worth of sugar and one teaspoon’s worth of cinnamon in a low-volume bowl. Set aside.
  • In a separate bowl, mix together one-fourth of a cup of brown sugar, two teaspoons of flour, one-eighth of a teaspoon of salt, and half of a teaspoon of cinnamon. Set aside.
  • In a bowl of about medium size, combine the ingredients for the muffins as follows: flour, bran, sugar, brown sugar, baking powder, cinnamon, and salt.
  • Eggs, melted butter, milk, and vanilla extract should be mixed together in a separate bowl and whisked.
    After adding the wet ingredients to the dry ingredients, mix everything together with a wooden spoon or a rubber spatula until everything is completely incorporated.
  • Add the apples and brown sugar swirl mixture in stages while incorporating it into the batter in a circular motion.
  • Sprinkle cinnamon sugar over the tops of the muffins after filling the cups almost all the way to capacity. Bake for 18 to 25 minutes, or until a toothpick inserted in the middle of a muffin reveals no residue when removed.

A paper towel can be used to line an airtight container or zip-lock bag in order to keep muffins fresh for up to four days. Muffins should be stored in a single layer. Another layer of paper towel should be placed on top of the muffins as well.   • 375 ml or 1 1/2 cups-Bran Original* cereal
  • 250 ml or 1 cup1% milk
  • 2eggs
  • 50 ml or 1/4 cup vegetable oil
  • 250 ml or 1 cup all-purpose flour
  • 20 ml or 4 tsp baking powder
  • 2 ml or 1/2 tsp salt
  • 2 ml or 1/2 tsp ground nutmeg
  • 175 ml or 3/4 cup chopped, fresh, or frozen cranberries
  • 175 ml or 3/4 cup diced McIntosh apple (not peeled – 1/4″/6mm dice)
  • 125 ml or 1/2 cup brown sugar, lightly packed


  • To make these apple bran muffins take them in a medium bowl, and combine cereal and milk. Let stand for 2 minutes or until the cereal softens.
  • In a large bowl, combine flour, sugar, baking powder, cinnamon, nutmeg, and salt. Set aside.
  • Add eggs and oil to the cereal mixture; beat well. Add liquid mixture to dry ingredients, stirring only until just combined. Fold in cranberries and apples. Portion batter evenly into 12 (2½”/6.5 cm) non-stick muffin pan cups, lightly coated with cooking spray.
  • Bake in 400°F (200°C) oven for 20 minutes or until tops spring back when lightly touched.
  • Tip: We like the sweetness of McIntosh apples to balance the tanginess of the cranberries in these muffins. If you prefer a more tart combination, choose an apple variety such as Empire or Spy.
