  • Diced shallot equals 1
  • Minced garlic (2 cloves)
  • Orzo, 8 ounces
  • about a quarter of a cup of red wine vinegar
  • Low-sodium vegetable broth, 2 cups
  • To Season: 1 Teaspoon of Dried Oregano
  • Sprinkling crushed red pepper flakes
  • 1 cup of baby spinach
  • One cup of cherry tomatoes halved
  • 1/2 cup of crumbled feta
  • 2 tablespoons of finely chopped herbs, such as basil, dill, and parsley
  • Served with wedges of lemon

Step 1

Put salt and pepper on your salmon.

Step 2

Oil should be heated in a large, deep skillet over a medium flame. Cook the salmon for 6 minutes per side or until it reaches an internal temperature of 140°, whichever comes first. Take the salmon off the heat.

Step 3

Shallots should be added and cooked for 5 minutes until soft; then garlic should be added and cooked for 1 minute until fragrant. When the timer goes off, add the orzo and stir it around for a minute. Toss in some vinegar and heat it until it disappears.

Toss in the broth and stir to loosen any browned bits stuck to the bottom of the pan. Add some salt, pepper, red pepper flakes, and oregano. Bring to a simmer, then lower heat to maintain a simmer, covered, until the orzo is tender, about 6-8 minutes. Orzo should be stirred occasionally to prevent it from sticking to the bottom of the pan.

Step 4

Mix in the greens, tomatoes, feta, and spices. The salmon should be placed back in the pan.

Step 5

Garnish with lemon wedges when serving.
