- The floured wax paper will now receive your dough
- With your hands, knead the dough until it is smooth. If the dough seems dry, knead in 1 tablespoon of water; if the dough is too moist, add more flour and knead it
- Cast iron skillet heated over low to medium heat
- Form the dough into twelve 2-inch balls. One dough ball should be placed on your floured wax paper. Roll the top sheet of wax paper to a thickness of about 1/8th using a rolling pin
- Flip the tortilla over into your palm after gently removing the top piece of wax paper. Then, similarly carefully remove the second piece of wax paper
- Heat it up to a medium setting. The tortilla should be cooked in the skillet for two to three minutes, or until it begins to brown
- After 2-3 minutes, flip the tortilla over and continue cooking. While it cooks, you may roll out the next tortilla alone or with a helper
- Serve hot
When using a tortilla press, line it with a tiny plastic bag that is open on all sides except one (the seam). Dust the interior of the bag with a little gluten-free flour.
